We understand that great grapes make great wine. V2G grapes come from pure soil; we do not use pesticides, insecticides or chemicals of any kind in our harvest.

By using organic farming methods we allow the soil to flourish, which gives life to microbes, nature and most importantly, the planet.

SYRAH

Grown at 164 ft. above sea level in an area that has a unique micro climate and is in a classified appellation zone. The vines are between 10 & 15 years old and have been farmed Biodynamically and certified as such for the last 5 years. The yield from the vines is consistent every year and they are dry-farmed.

CABERNET SAUVIGNON

Grown in the foothills of the Cévennes mountains at 656 – 820 ft. in altitude. The cool climate conditions are very well suited to late ripening Cabernet Sauvignon. Managed organically, the vines are between 7 & 12 years old and all dry farmed.

FILTRATION & BOTTLING

When testing the wine blend, we found a physical instability that could lead to precipitation of tartaric salts, which can cause a deposit in the bottle. To treat this naturally, we cooled the wine down to 24.8°F for 3 days before filtering it back into the tank.

Due to the potential of microbiological life in no-sulphur wine or wines that have less than 10mg of So2, we still wanted to sterile filter the wine to avoid any risk of bacterial development. This filtration takes place through pads of 0.65 microns as the wine flows to the bottling unit.

Throughout the filtration and bottling process, we regulate the free Oxygen levels in the wine. Our maximum allowance is 1mg/L, which is a control level indicating oxidation will not be possible.
